Invented on Barbados in the 1640s when an anonymous distiller discovered molasses could be fermented and distilled into rough high-proof spirit called 'kill-devil.' Charcoal filtration to create the modern clear style was pioneered by Bacardí after its founding in Cuba in 1862.
Flavor Profile
Highly variable by production method. Column-distilled white: clean, slightly sweet, hint of vanilla and sugarcane, neutral. Pot-distilled white (e.g., Wray & Nephew): explosive ester-forward, overripe banana, pineapple, feral funk. Agricole blanc: grassy, fresh-cut cane, white pepper, mineral, wet stone.
