Tequila Blanco — Los Altos (Highland)

Highland tequila production expanded significantly in the mid-20th century as the Los Altos region's red soil and elevation became recognized as producing distinctly sweeter agave. Patrón (founded 1989) and Don Julio (various expressions) largely defined the commercial Highland premium tier for the US market.

Flavor Profile

Sweeter, fruitier, more floral. Ripe banana, cooked pineapple, sometimes candied quality approaching confectionery. Round, soft texture. The gateway tequila for sweet-palate drinkers. 'If the guest says they want something smooth, Highland is usually the answer.' Dominant nodes: Sweet-Caramel, Citrus-Bright, Tropical-Lush.

Same as Tequila Blanco (NOM-006, DO 1974, CRT). Highland (Los Altos) is not a legal sub-designation — it's a terroir classification. 2000+ meters elevation, red iron-rich volcanic soil, cooler nights, wider temperature swings. Blue Weber agave grows larger here (piñas regularly exceed 80 kg) due to longer maturation in cooler climate.
