Sherry-Matured Scotch

The sherry cask tradition in Scotch developed partly from geography — Spanish sherry was imported to Britain in large quantities, and the used casks became available to Scottish distillers for whisky aging. The availability of sherry casks has declined as the sherry industry itself has contracted, making first-fill sherry casks increasingly expensive and scarce.

Flavor Profile

Dried fruit (fig, raisin, date), chocolate, Christmas cake, rich caramel from sherry residue. PX-finished Scotch reads much sweeter and richer than bourbon-cask Scotch. Sweet-Caramel and Chocolate-Roast nodes amplified. Color typically dark amber/mahogany.
