Sercial Madeira
Madeira's altitude-to-sweetness gradient is one of the cleanest terroir expressions in wine: higher vine = drier wine. Sercial at 800m+ produces the driest expression. Madeira's general history: wine that 'improved by crossing the equator' — ships carrying Madeira to the East/West Indies found it tasted better after the voyage (heat and agitation in the hold transformed it). Producers recreated this via estufagem. Founding Fathers — Washington, Jefferson, Hamilton — were Madeira drinkers; Declaration of Independence reputedly toasted with Madeira.
Flavor Profile
Driest Madeira. High-acid, lean, intensely tangy. Lemon zest, green apple, almond, characteristic bitterness on finish. Cutting precision — 'Fino Sherry's angular cousin: more acid, less salt.'
