Peat was historically used in Irish distilling before the industry consolidated and moved toward the light, smooth style. Connemara's revival of peated Irish whiskey draws on Cooley Distillery's tradition of maintaining historical Irish whiskey styles that the mainstream industry abandoned.

Flavor Profile

Smoke character but distinctly different from Islay Scotch. Irish peat has a different chemical composition than Scottish peat. Less medicinal, less iodine-forward, more earthy. The Irish whiskey softness (from triple distillation) rounds the peat's edges.
