Palo Cortado
The chalk marking system — an analog metadata system dating to at least the 18th century — is the physical record of the accident. The chalk marks are the original flavor classification system, predating digital taxonomy by centuries. Each vertical stroke, double stroke, and diagonal means something; the cellarmaster reads it the way a programmer reads code.
Flavor Profile
Nose of Amontillado (hazelnut, saline, aromatic complexity of biological aging); palate of Oloroso (rich, round, nutty, full-bodied). The best of both worlds. Dry. Complex. Rare.

DO Jerez-Xérès-Sherry; a natural anomaly — begins as Fino with flor, but the flor dies unexpectedly (not by design), transitioning to oxidative aging; retains aromatic finesse of biological aging with palate richness of Oloroso; rare and not fully reproducible on demand
