Oloroso
Most misunderstood of the dry Sherries — people expect sweetness because it's dark. Good Oloroso has the weight of a full-bodied red and the complexity of a 20-year spirit but is bone-dry. The Sherry renaissance of 2010–2020 placed Oloroso at the center of cocktail programs. The Dead Rabbit in NYC built Sherry (including Oloroso) into its identity.
Flavor Profile
Deep amber to mahogany. Rich, round, nutty, full-bodied. Walnut, dark toffee, dried fig, leather, roasted coffee, dried fruit. Bone-dry despite appearance — perceived sweetness comes from concentration of flavor compounds, not residual sugar. Long, warming finish.
