The Karwinskii family was essentially invisible in commercial export markets until the single-variety bottling movement of the 2010s. Their collective identity as the 'savory wing' was recognized only when systematic tasting across the family revealed the shared peanut-earth-mineral character absent in all other mezcal agave groups.

Flavor Profile

Shared Karwinskii character: savory-mineral wing of the mezcal world. Lower sugar = less sweetness. More earth, more mineral, more complex savory notes. Sub-variety profiles: Barril — most approachable Karwinskii, green apple + mint + mineral + light citrus, friendlier sibling to Madrecuixe. Bicuixe — most austere, almost entirely earth and stone, dried flower, near-tannic astringency, ascetic mezcal. Tobaziche — eucalyptus/camphor quality, cooling menthol-adjacent, the most 'cooling' Karwinskii. Largo — most extreme, intensely saline (almost seawater mineral), dried bay leaf, longest finish of the family. Cuishe — herbal and vegetal (green tomato, cilantro, bell pepper), bright electric minerality, leaner and more angular than Madrecuixe.

NOM-070. Mezcal from various Agave karwinskii subspecies. All share the same species designation but produce meaningfully different spirits. All are tall, columnar plants that grow differently from the rosette agave form. 8–15 years maturation depending on subspecies. Primarily from Oaxaca's Valles Centrales.
