Blending multiple agave varieties is an old tradition in some Oaxacan communities, born from practical necessity — a harvest might yield Espadín and wild Tobalá from the same terroir. The intentional, labeled ensamble as a premium product is a modern development, pioneered by producers who recognized that variety-interaction could create flavors neither species achieves alone.

Flavor Profile

Varies entirely by component varieties and proportions. Espadín + Tobalá ensamble: smoky-sweet base (Espadín) + floral-tropical notes (Tobalá) = greater complexity than either alone. Espadin + Barril + Mexicano: smoke-sweetness + vegetal-floral Karwinskii + wild-earth = layered, shifting flavors. The ensamble principle: 'achieve something no single variety can produce alone.' Not a compromise — a conversation between species.

Ensamble is a mezcal made from multiple agave varieties — either co-roasted, co-fermented, and co-distilled (traditional method) or blended after separate distillation (modern method).
