AgaveMezcal
Mezcal Añejo
Even rarer than Mezcal Reposado historically. Emerged as a premium category in the early 2000s as a handful of producers experimented with barrel aging's interaction with mezcal's smoke character. Still a small fraction of total mezcal production.
Flavor Profile
Smoke-Char + Vanilla-Oak — the collision of two strong, independent flavor systems. Unlike whiskey where grain is the blank canvas for barrel, mezcal brings complex phenolic smoke INTO the barrel. The result: smoky caramel, vanilla-char, dried fruit over an agave base. If the distillate was outstanding, the complexity multiplies. If the distillate was thin, the barrel can paper over the gap.

Wahaka Madre Cuixe Añejo
$100-150NOM-070. Mezcal aged more than 1 year in oak containers of up to 200 liters. Strict barrel size limit distinguishes this from tequila's Añejo (600L max). Small barrel aging concentrates oak influence faster. Very rare commercially — most serious mezcal is consumed unaged.
