Flavor Profile

Menthol arrives first, sharp and medicinal; then a wave of aggressive bitter (gentian, myrrh, chamomile, saffron). At 8–9 on the 0–10 bitterness scale. 'The bartender's handshake' — the industry shibboleth. A quarter-ounce in a Toronto adds a minty-bitter edge that transforms the drink. A full shot is a rite of passage.
