The category gave legal home to gins that use genuine distillation but want post-distillation flexibility — post-infusion, sweetening, or other finishing techniques.

Variable — encompasses everything from near-London Dry expressions to heavily post-processed flavored gins. The distillation step means the botanical base is more integrated and complex than compound gin, but post-distillation additions can add sweetness, color, and flavors not achievable through distillation alone.
