Demerara Rum

Demerara rum production began in the Demerara river region of British Guiana (now Guyana) in the 18th century, supplying the British Navy and merchant trade. The region's distinctive heavy-molasses estates and unusual wooden still heritage were consolidated under DDL in the 20th century, preserving equipment that would otherwise have been replaced by modern continuous stills.

Flavor Profile

Chocolate-Roast dominant in heavy marks, Sweet-Caramel and Vanilla-Oak throughout. Port Mourant mark: dense, oily, molasses richness, coffee, dark chocolate, something woody from the timber still. The characteristic 'Demerara note' — a combination of roasted molasses and subtle woody character — is unique to these stills and cannot be replicated elsewhere.

No formal GI currently in force. Guyana's Demerara Distillers Limited (DDL) produces all commercial Demerara rum.
