Coyote Mezcal

Coyote is one of several Agave americana varieties used in mezcal production — Sierra Negra being the other major expression. The variety has been used in Oaxacan communities for generations; its commercial availability in export markets is more recent, typically as a premium or limited expression.

Flavor Profile

Floral and dried fruit — rose petal, raisin, fig, dates — with gentle smoke and a perfumed quality between Tobalá's delicacy and Espadín's warmth. More approachable than its 12–14 year maturation suggests. The 'middle path' of mezcal — smoke and earth present but not dominant, with floral and dried-fruit notes occupying equal real estate. Honeyed sweetness. Some call it the 'feminine' mezcal profile.
