Cherry Heering
Cherry Heering was created in 1818 by Peter Heering, a young Danish merchant who developed a recipe macerating lightly crushed Danish Stevns cherries in neutral spirit, then aging the result in oak casks in his Copenhagen cellar. It became one of Denmark's most successful spirits exports during the 19th century, reaching the courts of Europe and the trading networks of the British Empire. The brand survived intact through 200 years of ownership changes and remains produced in Copenhagen, making it one of the oldest continuously produced liqueurs in the world.
Flavor Profile
Cherry Heering delivers a dark, brooding cherry character that reads as dried sour cherry, cherry skin, and a faint almond-marzipan note from the pits — more complex and less candied than cheap cherry cordials. Oak aging adds a secondary layer of vanilla, light tannin, and subtle spice that gives the liqueur genuine depth. The sweetness is restrained by Danish standards, allowing the fruit character and mild bitterness to read clearly on the finish.
