Tasting Notes
Fino: yeast, almond, sea salt, green olive, chalk. Manzanilla: chamomile (manzanilla means 'chamomile'), iodine, saline. Amontillado: hazelnut, amber, dried fruit, caramel. Oloroso: walnut, dark toffee, dried fig, leather. Palo Cortado: the complexity of Amontillado with the body of Oloroso. PX: raisin, molasses, date, fig, Christmas cake.
