Tasting Notes
Allspice (clove + cinnamon + nutmeg + pepper simultaneously — that's why it's called 'allspice'), eugenol (clove dominant), cinnamon warmth, black pepper, Jamaican rum funk, cane sugar sweetness, camphor, dried fruit. St. Elizabeth: balanced, moderate spice, approachable sweetness. Hamilton: more assertive, rum-forward, spicier. The clove note is the signature — if clove dominates your palate, you've identified pimento dram correctly.

St. Elizabeth Allspice Dram ($22-28, the standard, most available, 22.5% ABV)
Hamilton Pimento Dram ($28-35, higher proof at 31%, more intense spice, Ed Hamilton's Jamaican rum program)
Bitter Truth Pimento Dram ($25-32, German-produced, balanced). Homemade: crush allspice berries, soak in overproof Jamaican rum for 4-7 days, strain, add simple syrup. Cost is minimal, quality is excellent
