Tasting Notes

Varies radically by base ingredient. Potato (imo): earthy, roasted, sweet, rich. Barley (mugi): toasted grain, clean, nutty, light. Rice (kome): floral, delicate, sake-like. Buckwheat (soba): herbaceous, earthy, distinctive. All share a round mouthfeel from pot distillation that column-still spirits cannot replicate.
