Tasting Notes
Green walnut husk, dark chocolate, cinnamon, clove, tannic grip. Dark brown to near-black — opaque. The tannins are assertive — like over-steeped black tea. Underneath: baking spice (cinnamon, clove), lemon zest brightness, honey sweetness. Aged versions mellow — tannins soften into coffee-chocolate depth. Finish is very long, tannic, warming. The jugalone from green walnut husks creates a bitterness unlike any other ingredient.
Brand Guide
Benchmark: Nux Alpina Nocino ($28-35, Austrian-Italian). Standard: Various Italian commercial nocino ($20-28). Craft US: Fabrizia Nocino ($25-32). DIY: The ultimate version — every Italian family's recipe is different. The homemade versions, aged 1-3 years, are consistently the best.
