Tasting Notes
Green banana peel, plantain, starchy, herbaceous, light citrus, vegetal sweetness, slightly astringent. Not candy-banana — the unripe character is distinctly different. More savory and green than sweet and tropical. The starch note is unique among fruit liqueurs.

Primary: Giffard Banane Verte ($22-28) — essentially the only dedicated brand. For substitute: muddle fresh green banana + simple syrup. The category is so niche that one brand defines it. Tempus Fugit Crème de Banane ($30-35) can approximate some applications.
