Gentian liqueur (e.g. Suze, Salers etc)
CoreAuvergne / France, Massif Central / France, Swiss Alps
ABV15-20%. Suze at 15% (EU) or 20% (US). Low proof — it's an aperitif-weight bitter, not a spirit.
Sub-styles
Suze (sweeter / mainstream)Salers (drier / more traditional)Avèze (Auvergne regional)Gentiane de Lozère
Tasting Notes
Gentian root, earthy bitterness, yellow wildflowers, dried herbs, honey (in Suze), mineral, alpine meadow, subtle citrus peel. The bitterness is clean and rooty — fundamentally different from the sharp citrus bitterness of Campari or the menthol punch of Fernet. It tastes like the earth it comes from.
Brand Guide
Standard: Suze ($25-30, most accessible). Traditional: Salers Gentiane ($22-28, drier, less sweet). Regional: Avèze ($20-25, Auvergne local). Craft: various small producers ($25-40). There's no 'well gentian' — you either carry a gentian liqueur or you don't.
