Barolo: tar, roses, quinine, dark cherry, leather. Barbera: bright cherry, quinine, citrus, red berry. Grignolino: strawberry, floral, light quinine, rose hip. The china bark is the constant; the wine underneath is the variable.

Barolo: Cocchi ($35-45), Cappellano ($60-80). Barbera: Cocchi ($20-28), Bera ($25-32). Grignolino: harder to find, small Piedmont producers ($25-35). Cocchi is the gateway; Cappellano is the connoisseur's choice.
