Tasting Notes

Chinchona bark (quinine bitterness), orange peel, gentian, honey. Wine-based versions are lighter, more floral. Spirit-based versions are more assertive, darker. The quinine bitterness is the thread — sometimes subtle (Lillet), sometimes dominant (Bigallet). Color ranges from pale gold (Lillet) to deep amber (China-China). The bitterness should stimulate appetite — these are aperitif drinks.
