Mass-market: candy banana, isoamyl acetate, sugar syrup. Craft: ripe Cavendish banana, vanilla, light tropical. The color test: neon yellow = artificial, pale gold = real banana. Giffard shows actual banana flesh flavor with a creamy mid-palate. Tempus Fugit shows dried banana and brown-butter notes. The craft versions have a finish; the artificial versions end at the sugar.
