Tasting Notes

Bitter cacao, dried chile heat, cinnamon, vanilla, roasted cacao nib, dark chocolate, ancho pepper, slight smoke. The chile should warm the back palate, not burn the tongue. Good versions balance bitter cacao against chile heat. If it tastes like chocolate syrup with cayenne, it missed the point.
