aromatised wine
ReferenceItaly, France, Spain
Tasting Notes
Varies enormously by type: sweet vermouth (cherry, vanilla, wormwood), dry vermouth (chamomile, citrus, white pepper), quinquina (quinine bitter, citrus, honey), Americano (gentian, orange, cola). The wine base should be perceptible — floral in Cocchi, herbal in Noilly Prat. Bitterness ranges from gentle (Lillet) to aggressive (Punt e Mes). The defining character is complexity — no single note dominates. If it tastes one-dimensional, the base wine is poor quality.
Brand Guide
Vermouth: Cocchi di Torino, Carpano Antica ($22-30). Quinquina: Cocchi Americano, Lillet Blanc ($18-25). Americano: Cardamaro, Cocchi Rosa ($18-24). Chinato: Cocchi Barolo Chinato ($30-40). Budget: Martini & Rossi, Cinzano ($8-12). The quality gap between premium and budget aromatised wine is the biggest value upgrade in cocktail making — $10 more on vermouth transforms a Negroni.
