Bitter orange, gentian root, rhubarb, quinine. Color ranges from pale peach (Aperol) through ruby red (Campari) to deep amber. The bitter-sweet balance is the defining character — aperitivos should stimulate appetite, not overwhelm it. Lighter versions (Aperol, 11%) are candy-adjacent. Stronger versions (Campari, 25%) show real botanical bitterness. The best aperitivos make you hungry. If it makes you wince, it's an amaro, not an aperitivo.
